Menu - Hewn Bread

Hewn uses organic flour and grains. We partner with several local farmers to source our ingredients.

Our Libertyville outpost offers a curated selection of items. Certain items, such as hot sandwiches, dutch crunch rolls, and canelés are only available in Evanston and Winnetka. Cold Sandwiches are now available at all locations.

Challah is available every Friday at 9am for walk-in sales at all locations. We suggest pre-ordering challah through our Tock site. Baguettes are available at all locations every day – they are usually out of the oven in Evanston by 9:30 am, and available at our outposts by 10:30am.

Daily Specials

Our bread selection rotates daily and consists of our country loaf, blonde country loaf, whole wheat seeded and rotating specialty loaves. Baguettes are available in Evanston and they are baked around 9:30 am. They are available on a first come, first served basis. Please note that this schedule is subject to change pending ingredient availability and/or certain holidays or events.

Country

Naturally leavened country bread made with organic flours from Janie's Mill and Central Milling. Baked every day.

Blonde Country

Our Country loaf with a lighter interior color. A Hewn fan favorite - also baked every day.

Polenta, Pumpkin Seed and Rosemary

Coarse Bloody Butcher polenta folded into country dough and layered with pumpkin seeds and rosemary.

Roasted Heirloom Potato, Rosemary Bread

Oven roasted potatoes folded into the country dough with fresh rosemary. Currently available during certain holidays.

Spelt

A blend of Janie's Mill whole grain spelt and Meadowlark sifted spelt. This bread has a nuttier flavor and higher protein content.

Challah

Braided bread served every Friday. Challah is first come, first served - or you can order plain or raisin two days in advance through our Tock site.

Cheddar Country

Five-year aged, yellow cheddar folded into the country dough and fermented overnight.

Picholine-Olive Country

Buttery Picholine olives folded into Country dough and sprinkled with Herbes de Provence.

Whole Wheat Seeded

A 60% whole wheat with flax, chia, millet, pumpkin and sunflower seeds incorporated into the dough.

Evanston Red

A heritage variety of wheat grown and milled in Illinois.

Parmesan and Garlic Country

The country bread base with Parmesan Reggiano and roasted garlic folded into the dough.

Caramelized Onion Rye

Forty percent stone-milled dark Rye bread with caramelized onions infused in the dough.

Midwest Blend

A unique bread with a blend of Einkorn, Red Fife and high protein wheat with stone-milled flour from Janie's Farm in Illinois.

Spent Grain Beer Bread

Our Country dough infused with leftover grains used in the brewing process from local Evanston breweries.

Cranberry Walnut

Cranberries and walnuts mixed throughout our Country bread.

Rye with Oats

Our rye bread topped with oats from Hazzard Free Farm.

Brioche Loaf

Traditional brioche with a soft buttery crumb and a thin, golden brown crust.

Blonde Country Pan Loaf

Our Blonde Country bread baked in a loaf pan. A great sandwich or toast bread with a softer crust. Available in limited quantities.

Turkey Red

A heritage variety of wheat grown and stone-milled in Illinois. This bread includes 70% Turkey Red flour and 30% wheat flour, both sourced from Janie's Farm. This is a hearty bread with a nutty flavor.

Ciabatta

Classic ciabatta loaf with a crispy crust and a chewy, airy crumb.

Beer Bread

Our Country loaf hydrated with beer from Evanston breweries. Available during certain special holidays

Baguette

A traditional baguette, out of the oven by 10 am. Available in plain or seeded.

Holmenkollen Rye

A bread reminiscent of what Ellen ate as a college student in Norway. 100% stone milled rye with sunflower, pumpkin, cracked rye, sesame and flax seeds.

Red Fife

Thirty percent Janie's Red Fife, 30% Meadowlark Red Fife and 40% Janie's high protein flour. A delicious and hearty heritage wheat.

Durum

Thirty percent sifted durum and 30% high pro from Janie's Farm and 40% Central Milling flour with toasted sesame seeds on the crust.

A selection of sandwiches, brownies and cookies are available every day. Cold and hot sandwiches are available in Evanston and Winnetka. Cold Sandwiches are available in Libertyville. Our current sandwich menu includes the following:

Hot sandwiches: Breakfast Sandwich with Eggs, Cheese, Bacon and Onion Jam on a Brioche Bun, Turkey Chipotle Melt on Ciabatta, Pulled Pork on Brioche Bun, Reuben on Country, Spicy Chicken with Roasted Peppers on Brioche Bun

Cold sandwiches: Veggie on Foccacia, Italian on Seeded Torta, Turkey Cranberry on Country, Ham and Cheese on Country. Tuan salad containers also available.

Challah is made every Friday and it is available at all locations. Pre-orders for pick up are available on Tock. Be sure to select the correct location for your order pick up.

Tala Cold Brew and and a variety of cold drinks are also available.

Ordering & Catering

Hewn will close early if we sell out of breads and pastries. Please note that we are not able to reserve items over the phone. Certain menu items can be ordered online for our Evanston Bakehouse with 2 days notice. Customers wanting to purchase more than 10 loaves at a time must place an order online. Same day orders are available on our Hewn App.
