Hewn uses organic flour and grains. We have returned to a daily bread schedule for walk-up orders. You can still order bread online for pre-order contactless pick-up outside of the store. (Online bread offerings are currently Country, Blonde Country, Heritage Whole Wheat, & Whole Wheat Seeded).

Our bread selection rotates daily and consists of our country loaf, blonde country loaf, whole wheat seeded and rotating specialty loaves. They are available on a first come, first served basis. Please note that this schedule is subject to change pending ingredient availability and/or certain holidays or events.
Naturally leavened country bread with stone milled Glenn wheat and Janies Mill whole wheat flour. Baked every day.
Our Country loaf with a lighter interior color. A Hewn fan favorite - also baked every day.
Polenta, Pumpkin Seed and Rosemary
Coarse Bloody Butcher polenta folded into country dough and layered with pumpkin seeds and rosemary.
Roasted Heirloom Potato, Rosemary Bread
Oven roasted potatoes folded into the country dough with fresh rosemary.
100% Janies Mill Spelt stone-milled in Illinois. This bread has a nuttier flavor and higher protein content.
Braided bread served every Friday. Challah is first come, first served - or you can order two days in advance through our Tock site.
Two-year aged, white cheddar folded into the country dough and fermented overnight.
Buttery Picholine olives folded into Country dough and sprinkled with Herbes de Provence.

Whole Wheat Seeded
Janies Mill whole wheat with flax, chia, millet, pumpkin and sunflower seeds gently folded into the dough.

Parmesan and Garlic Country
The country bread base with Parmesan Reggiano and roasted garlic folded into the dough.
Caramelized Onion Rye
Thirty-five percent stone-milled Rye bread with caramelized onions infused in the dough.
A unique bread with a blend of Einkorn, Spelt and Glenn wheat with stone-milled flour from farms in Illinois and Wisconsin.
Our Country dough infused with leftover grains used in the brewing process from local Evanston breweries.
Cranberries and walnuts mixed throughout our Country bread.
Rye with Oats
Our rye bread baked seam side up with oats from Hazzard Free Farm.
Traditional brioche with a soft buttery crumb and a thin, golden brown crust.
Chocolate Hazelnut Brioche
Same as our Brioche Loaf with the addition of Chocolate Hazelnut swirled throughout. This loaf is currently unavailable - check back for updates.
Country and Honey Oat Pan Loaf
Our Country and/or Honey Oat bread baked in a loaf pan. A great sandwich or toast bread with a softer crust. Available in limited quantities.

Ordering & Catering
Hewn will close early if we sell out of breads and pastries. Please note that we are not able to reserve items over the phone. Certain menu items can be ordered online with 2 days notice. Customers wanting to purchase more than 10 loaves at a time must place an order online.

Looking for a unique space to host your event? Our front of house area at the bakery is available to rent for small gatherings of 25 people or less. Catering is provided for food and non-alcoholic beverage service. Available days include Monday and Tuesday (all day) and Sat/Sun after 5 pm. Email email@example.com for more info.
